Spinach Dip

Ingredients

  • 10 oz. spinach, frozen
  • 2 Tbsp red wine vinegar
  • 3 medium garlic cloves, minced
  • ½ oz fresh mint, minced
  • 1 cup reduced fat sour cream
  • 1 pinch ground black pepper

Directions

  1. Let the packaged spinach defrost, using microwave on high 3-4 minutes.
  2. Drain water until spinach is completely dry.
  3. Add all the ingredients to the spinach and mix together. Chill for 2 hours.
  4. Serve with bread, crackers, vegetables, pita wedges, or breadsticks.

Yield: 12 servings
