Heart Healthy Lemon Spinach

Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp garlic, minced
  • 6 oz. baby spinach
  • juice of 1 lemon
  • ¼ tsp salt
  • Pepper to taste

Preparation

  1. Put 1 oz. olive oil in a wok or 10-inch sauté pan. Add in about 1 Tbsp minced garlic. Cook on medium-high heat for 20 seconds.
  2. Add 6 oz (~ 3 large handfuls) of baby spinach to garlic and oil. Cook 2-3 minutes.
  3. Squeeze the juice of 1 lemon over the spinach while cooking. Add ¼ tsp salt and pepper
