Kiwifruit, Cucumber, Orange, and Cashew Salad

Ingredients

  • 4 kiwifruit, peeled and thinly sliced
  • 1 large English cucumber, sliced
  • 1 orange, peeled, sliced, and seeds removed
  • ¼ cup (1 oz) unsalted, toasted cashew nuts

Dressing

  • 2 Tbsp balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tsp Dijon mustard
  • Salt & freshly ground pepper

Directions

  1. Layer kiwifruit, cucumber, and orange slices on a platter.
  2. To make dressing, combine all dressing ingredients in a small bowl. Season to taste with salt & pepper.
  3. Pour dressing over salad.
  4. Sprinkle with toasted cashews and serve immediately as an accompaniment to spicy Moroccan or Thai dishes or barbecued seafood or chicken.
