Place Italian seasoning, black pepper, and ground turkey in a large bowl. Combine gently.
Divide turkey mixture into 8 equal portions; flatten into patties. Tip: Spray counter surface with cooking oil to prevent patties from sticking.
Place an equal amount of cheese and olives in the center of 4 patties. Cover with the remaining patties and pinch the edges closed.
Place stuffed patties on the grill. Turn once while cooking. Burgers are cooked when a thermometer inserted in the center reads 165º F (approximately 8-10 minutes).
Serve each burger on a bun with spinach leaves if desired.
