Ingredients
- 1/3 cup non-alcoholic beer
- ¼ cup honey
- 4 Tbsp. low sodium soy sauce
- 1 Tbsp. canola oil
- 1/8 tsp coriander
- ½ tsp. ground ginger
- ½ tsp. crushed red pepper
- ¼ tsp. black pepper
- 4 4-oz. boneless center-cut loin pork chops (about ¾" thick), trimmed
- 2 peaches, halved and pitted
2 cups cooked whole wheat couscous
- Cooking spray
Directions
- Combine beer, honey, soy sauce, canola oil, coriander, ginger, red pepper, and ¼ tsp. black pepper in a large bowl. Add pork and peaches; toss well to coat.
- Heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Remove pork and peaches from bowl, reserving marinade. Place pork and peaches on grill pan; cook 4 minutes on each side of until pork is done.
- While the pork cooks, place the marinade in a microwave-safe bowl; microwave at HIGH 2 minutes. Be sure the marinade comes to a full boil, which is for the food safety and a recommend practice whenever a meat marinade is later used as a sauce. Place ½ cup of couscous on the center of the plate. Spoon on top pork and peaches.
Yield: 4 servings
Serving Size: 1 chop, 1 peach half, ½ cup couscous
